the rice we got from Yuzawa

This is rice we got from Yuzawa, Niigata prefecture. It is called Uonuma koshihikari rice, a brand which is recognized as some of the best stuff in Japan! It even challenges the ever-so reknown Akita koshihikari rice.

The taste was a bit different from your average grain of rice. It is chewier in consistency and sweeter to the tongue. Very tasty stuff. The rice from Ibaraki-ken and Chiba-ken are also quite tasty. Shinmai, a.k.a. newly harvested rice is particularly chewy and sweet...mMmmm.

Yesterday we had Uonuma rice served with smoked salmon, capers, lemon oil, and finely sliced shallots on top. Very good results...not guinea pig food!
